The Taste of Place
Founder Tim Richmond, formerly of Melbourne's acclaimed Longplay bar, had long been captivated by oysters, great wine, and the stories behind both. Rather than simply serving oysters, he wanted to understand them - to discover how place, tide, water and time shape their flavour.
Together with co-founder Sunny Leunig, Tim travelled to the Sapphire Coast of New South Wales to document the remarkable Sydney Rock Oyster. Meeting oyster farmers, exploring the estuaries, and learning about the unique merroir of the region, they discovered that every oyster carries the character of where it was grown.
That journey became the foundation for Fitzroy Oyster House.
Today, Fitzroy Oyster House is a neighbourhood bar dedicated to exceptional oysters, thoughtfully sourced seafood, carefully curated wines, and genuine hospitality. Every oyster is selected for its provenance, seasonality and flavour, inviting guests to experience the subtle differences that make each growing region unique.
